I ended up in Brussels this December as Ryanair cancelled my flight to Hamburg and I could not find any other affordable flights for the date I wanted to go, resulting in looking for other places to go. I settled on Brussels, however, decided not to fly, but to get the train. The Eurostar goes from London St Pancras International station to Brussels Midi station in about 2 hours.
From the city I live in, Hull, a Megabus will take you to London via east midlands parkway for less than £10 arriving at St Pancras international, that the Eurostar leaves from. This was perfect for when you are lugging a suitcase with you and very affordable.
I stayed at the Easy Hotel in Brussels, a short underground train ride from Brussels Midi station where the Eurostar terminates. The hotel was also 2 minutes walking distance to the start of the Christmas markets and round the corner from a large shopping centre. The hotel was very reasonably priced for its location, the room was small but very clean and comfortable, with free wifi, a TV and an ensuite.

The hard rock cafe, just off the main square was the busiest hard rock I had been to so far, there was over an hours wait to eat or drink at 2pm. Luckily I decided to stay and wait, browsing the shop and was able to get a seat and have a drink whilst waiting for a table to eat, 20 minutes in a table came available. I would definitely recommend booking in advance if you are wanting ti to eat at the Hard Rock Cafe Brussels.
Overall Brussels is a beautiful city with magical Christmas markets, though be aware, the travel there may be cheap, but the city is a little on the more expensive side for food and drink.
